Almond Coconut Granola

This is a super easy and tasty granola packed with flavor and nutrients! It is also relatively low in sugar, unlike many store-bought granolas. If you are someone who loves to eat granola as part of your breakfast, choosing a low-sugar option that includes a balance of carbs (oats and coconut), protein (almonds), fat (coconut oil and almonds), and fiber (oats, almonds, coconut) can help set you up for a successful day.


Bonus - this recipe makes the whole kitchen smell amazing while it bakes!


Ingredients:

2 cups rolled oats

1 cup unsweetened shredded coconut

1/2 cup almonds (roughly chopped)

1/2 cup coconut oil (melted)

1/4 - 1/2 cup maple syrup (adjust for personal taste preference)

1 tsp cinnamon

1 tsp vanilla extract

1/2 tsp almond extract

1 tsp salt


Directions:

  1. Preheat oven to 300 F

  2. Combine everything in a large mixing bowl

  3. Spread evenly on a baking sheet

  4. Bake for 30 minutes (mix the granola halfway through if your oven cooks unevenly like mine does)

  5. Let your granola cool before storing it in an airtight container (a large jar with a tight-fitting lid is an excellent option)
